50 μέρες καραντίνας. Τις τελευταίες 20 μας συνοδεύει το καινούργιο μας κατοικίδιο. Προζύμι λέγεται και είναι κορίτσι. Κάθε μέρα τρώει και μεγαλώνει. Αν το ξεχάσουμε ξεφουσκώνει, σα να μας κρατάει μούτρα. Έχει μάθει από μικρό να διεκδικεί 🙂 Ξεκίνησε σαν απλό πείραμα του άντρα μου. Ήθελε να δει αν μπορεί από αλεύρι και νερό να δημιουργήσει κάτι ζωντανό. Οι πρώτες προσπάθειες απέτυχαν. Όμως δεν το έβαλε κάτω. Η επιμονή του ανταμείφθηκε. Στην τρίτη προσπάθεια είδαμε έκπληκτοι το μείγμα να φουσκώνει. Άρχισε να το μεταγγίζει σε άλλα βάζα. Το πρώτο στο ντουλάπι δίπλα στο πλυντήριο, το δεύτερο στο συρτάρι κάτω από τα μακαρόνια, το τρίτο δίπλα στις μπύρες…Όσο περνάνε οι μέρες, όλο και ένα καινούργιο βάζο ξεφυτρώνει σε ένα καινούργιο μέρος. Μεταφέρουμε λίγα λίγα τα τρόφιμα στην αποθήκη, για να χωράνε τα βάζα. Και φυσικά δεν πετάμε πια κανένα. Όλα έχουν πια λόγο ύπαρξης. Κάθε βάζο είναι στολισμένο με ένα χρωματιστό λαστιχάκι. Έτσι παρακολουθεί αν φούσκωσε το περιεχόμενο του. Και όπως είναι φυσικό φτιάχνει ψωμί. Όχι κάθε 2 μέρες, φτιάχνει συνέχεια. Σε διαφορετικές υφές, σχήματα και μείγματα. Σήμερα μπαγκέτα, χτες πολύσπορο, προχτές λευκό. Και φυσικά δε σταματάει εκεί. Ενδιάμεσα, φτιάχνει άλλα παρασκευάσματα με προζύμι: φοκάτσια, pancakes, πίτσες. Μην προλάβει και διαμαρτυρηθεί το στομάχι μας. Φυσικά ακόμα και να θέλαμε, δεν μπορούμε να τα φάμε όλα. Αλλά αυτό δεν τον σταματά. Χαρίζει στους γείτονες, καταψύχει μερικά, βρίσκει πάντα μια λύση, για να είμαστε όλοι ευχαριστημένοι. Ειδικά εκείνος που ξεχειλίζει από περηφάνια και αγάπη για το καινούργο του κατοικίδιο. Κι εμείς; Εννοείται ότι κι εμείς το αγαπάμε. Με το στομάχι μας σίγουρα, αλλά και με την καρδιά μας. Γιατί; Επειδή το ψωμί με προζύμι είναι νόστιμο, έχει τραγανή κόρα, παραμένει φρέσκο ακόμα και την επόμενη μέρα και το πιο σημαντικό: είναι εύπεπτο, εντελώς φυσικό και εξαιρετικά υγιεινό! 50 days quarantine. For the last 20 of them we have been accompanied by our new pet. It is called sourdough and it is a girl. She eats and grows every day. If we forget about her, she deflates, her way of pouting. She knows well how to make a claim:-) It started as my husband’s simple experiment. He wanted to see if he could create something alive just from flour and water. The first attempts failed. But he did not give up. His persistence was rewarded. In the third attempt, we were surprised that the mixture inflated. He started pouring it into other jars. The first in the closet next to the washing machine, the second in the drawer under the spaghetti, the third next to the beers…

As the days go by, a new vase appears in a new place. We transfer the food little by little to the cellar , so that the jars can fit into the kitchen. And of course we don’t throw any. Everyone of them now has a reason to exist. Each vase is decorated with a coloured rubber band. In order to watch if its content inflates. And of course he makes bread. Not every 2 days, all the time. In different textures, shapes and mixtures. Today baguette, yesterday multigrain, the day before white. And of course he doesn’t stop there. In the meantime, he bakes other things: focaccia, pancakes, pizzas. In order not to let time to our stomach to protest. Of course, even if we wanted to, we can’t eat everything. But that doesn’t stop him. He gives them to the neighbours, he puts some of them in the freezer, he always finds a solution, so that we can all be happy. Especially he is happy, full of pride and love for his new pet. And us? Of course, we love her too. First of all with our stomach, but with our heart too. Why; Because her bread is delicious, it has a crispy crust, it remains fresh even the next day and most importantly: it is digestible, completely natural and extremely healthy!
